This I find very useful. It is a very complete list of LaTeX Symbols: ftp://tug.ctan.org/pub/tex-archive/info/symbols/comprehensive/symbols-letter.pdf

If you cannot find your symbol in that list or you are just plain lazy (like me), use this: http://detexify.kirelabs.org/classify.html - It recognizes symbols when you draw them. Very, very handy.

Another way to learn is to download sources from arxiv.org. Most of the articles have them.
